Spinach Salad
Ingredients Procedure

1 1/2 lbs. spinach
3 hard boiled eggs finely chopped
10 strips bacon cooked crisp and crumbled (3/4 cup)
1/4 cup grated Parmesan or Romano cheese
1 1/2 cups garlic croutons (2 to 3 slices bread if you make your own)
mushrooms (optional)

Trim roots and stems from spinach. Wash thoroughly, drain well and chill. Just before serving add:

Toss with enough bottled Italian dressing to coat thoroughly or make you own oil and vinegar dressing. Sliced raw mushrooms may be added if desired.

Makes 6 to 8 side salads or 3 to 4 main course luncheon salads.
